- 4 bell peppers (green, yellow, red)
- 1 lb ground buffalo meat
- 1 egg
- 1/2 cup of spaghetti sauce
- 2 tbsp of sun dried tomato pesto
- 1/4 cup diced onion
- italian seasoning
- 1/2 cup bread crumbs
- 1/4 cup of grated italian cheese
Start with 4 good size bell peppers (green, yellow, red, whatever you prefer). Wash, then cut them in 1/2 from top to bottom and core them.
Take 1 lb. of ground buffalo meat, 1 eggn and 1/2 cup of spaghetti sauce (we like to also add 2 tbsp. of sun dried tomato pesto, but its not mandatory). Smush it together and add about 1/4 cup of diced onion and some italian seasonings. Next add 1/2 cup of breadcrumbs and 1/4 cup of grated italian cheese. Mix it up well, then fill the pepper halves with a nice firm ball of the mixture.
Then put the bison stuffed peppers in a baking pan or dish (make sure you spray with non-stick spray first). Top each pepper with about1/4 cup of spaghetti sauce, cover with foil and cook in a preheated oven on 375 for about 45 minutes. Uncover, and sprinkle more grated italian cheese, then put them back in the oven long enough to melt the cheese.
